VEGANUARY easy recipes and ideas for beginners in veganism

HAPPY NEW YEAR !

I hope you all had an incredible 2019, and are excited to see what 2020 brings (I know I am!).

Most of you have probably heard of VEGANUARY, and it’s pretty self explanatory. One month of veganism to start the year, to make your body feel healthy and refreshed, help the environment, reduce animal cruelty, and hopefully to convince you to stick at it. Or, atleast realise that meat and dairy is not essential for every meal.

Yes, I know it seems a little scary. Before I became vegan, it seemed impossible for me too. But trust me, if you give it a go, you’ll see theres SO MUCH more to it than just salad.

I’ve put together a selection of my favourite, most simple, and staple recipes to help you get through the month…and mabye even become staples for life. They’re all made with no-nonsense ingredients, super healthy, quick to make, AND are good for the planet.

I hope these recipes give you an insight into how INCREDIBLE veganism can really be. Best wishes in the new year!

BREAKFAST

EASY VEGAN PANCAKES. These pancakes are perfectly sweet, full of flavour, and SO good for you too! I love serving with vegan yogurt, chia jam, and creamy almond butter.

TOFU SCRAMBLE People often struggle to think of savory vegan breakfast options. This easy and versatile tofu scramble will transform your mornings, when you your not really fancying something sweet. Packed with flavor, and your choice of veggies, its the perfect high-protein start to the morning!

VANILLA BAKED OATS(serves 1):

70g(½ cup) oats 120ml(½ cup) plant milk 1/2 spotty banana 1 tsp vanilla extract 1 tbsp maple syrup 1 tsp baking powder 1 tbsp almond butter Pinch salt Toppings of choice

Method: •Preheat the oven to 180 fan, mash the banana in a bowl, and add all the ingredients. •Mix well, and transfer into a oven proof dish. •Cook for 25 minutes until golden, then either eat straight out of the dish, or spoon into bowls and top if you wish.

LUNCH

KALE and WALNUT PESTO PASTA One of my favourite pasta dishes, and so unbelievably tasty! This one’s made with crunchy walnuts, vitamin-packed kale, and tasty basil, and is sure to satisfy your taste buds(and time schedule).

HOMEMADE BAKED BEANS Because who doesn’t love a baked bean?? Warming, filling, and incredibly tasty, these ones are like the ones in the tin….but 1000x better :). Aaanndd, no added nonsense. Bonus!

DINNER

FRAGRANT SWEET POTATO AND CHICKPEA CURRY Now THIS is flavour. A gorgeous blend of herbs and spices make this fragrant sweet-potato chickpea curry one of my all time FAVOURITE meals….especially with brown rice and homemade breads.

RAINBOW BUDDAH BOWLS These gorgeous bowls are packed with all the best things. Colours, nutrients, and DELICIOUSNESS. What more could you ask for? With a whole range of grains, beans, veggies and toppings…they’re a real winner!

MEXICAN You think those ready-preped fajita boxes taste good? Well my homemade mexican spice blend is on a ANOTHER LEVEL. This flavour-packed mix is made up of authentic flavours, from paprika and cumin, to chilli and garlic. And, it’s so easy to make! Add to veggies and oil fried in a pan, then place in a wholewheat wrap with some guacamole, salsa, brown rice, and beans. DELICIOUS!

DESSERT

GOOEY CHOCOLATE BROWNIES INSANELY delicious, these chocolatey bites of heaven are perfectly sweet, rich, soft, and have a gorgeous nutty crunch. Topped with a dreamy chocolate drizzle, and a few roasted nuts, they’re a real crowd pleaser.

BANANA BREAD Who doesn’t love banana bread? Sweet, squidgy, moist, satisfying, full of flavor…I could go on. But it gets better. I mean, chocolate chips? Of course it gets better! This vegan banana bread is easy to make, has that perfect fluffy texture, and tastes incredible. You would never know it’s vegan, and pretty good for you too(win win right?!). If I haven’t convinced you already, mabye this’ll make you drool…
