- Preheat the oven and prepare the baking sheet:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. This will prevent the cookies from sticking as they bake.
- Melt the butter and syrup:
- In a small saucepan over low heat, melt the butter and golden syrup together until fully combined. Stir occasionally to ensure they melt evenly.
- Mix the dry ingredients:
- In a large bowl, combine the flour, baking powder, salt, shredded coconut, and rolled oats. Stir them together so the dry ingredients are well-mixed.
- Combine wet and dry ingredients:
- Pour the melted butter and golden syrup mixture into the dry ingredients and stir until fully combined. The dough should be slightly sticky but firm enough to hold its shape.
- Shape the cookies:
- Using a spoon, scoop out small amounts of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Press down gently on each ball to flatten slightly.
