Ingredients
  

  • cup 150g salted butter, softened
  • 1 tbsp golden syrup or light corn syrup
  • ¾ cup + 2 tbsps 175g granulated sugar
  • cup 75g all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup 75g shredded coconut
  • cups 115g rolled oats

Method
 

  1. Preheat the oven and prepare the baking sheet:
  2. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. This will prevent the cookies from sticking as they bake.
  3. Melt the butter and syrup:
  4. In a small saucepan over low heat, melt the butter and golden syrup together until fully combined. Stir occasionally to ensure they melt evenly.
  5. Mix the dry ingredients:
  6. In a large bowl, combine the flour, baking powder, salt, shredded coconut, and rolled oats. Stir them together so the dry ingredients are well-mixed.
  7. Combine wet and dry ingredients:
  8. Pour the melted butter and golden syrup mixture into the dry ingredients and stir until fully combined. The dough should be slightly sticky but firm enough to hold its shape.
  9. Shape the cookies:
  10. Using a spoon, scoop out small amounts of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Press down gently on each ball to flatten slightly.
