Basic All-In-one Sheet Cake

Ingredients
  

For the cake:
  • 1 cup + 2 tablespoons 230g granulated sugar
  • 1 cup + 1 tablespoon 230g butter, straight from the fridge
  • 2 ½ cups 290g all-purpose flour
  • 1 teaspoon salt
  • 4 ½ teaspoons baking powder
  • 4 extra-large eggs
  • 5 tablespoons milk
To finish:
  • A little sifted confectioners’ sugar optional

Method
 

  1. Preheat the oven to 350°F (180°C). Lightly grease a 9x13-inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, add the butter and sugar. Beat them together until the mixture becomes light and fluffy.
  3. Crack the eggs into the bowl one at a time, beating well after each addition.
  4. Sift the flour, baking powder, and salt together in a separate bowl. Gradually add this dry mix into the wet ingredients, stirring gently to combine.
  5. Pour in the milk and stir until the batter is smooth and creamy. Make sure not to overmix.
  6. Pour the batter into the prepared baking pan and spread it evenly with a spatula.
  7. Bake for about 30–35 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  9. Once cooled, dust with a little sifted confectioners’ sugar if you like.

Notes

To Make a Larger Sheet Cake

If you want to make a larger sheet cake, simply double the ingredients. Use a larger baking pan, such as an 11x15-inch or 12x18-inch pan, to accommodate the increased batter. Adjust the baking time to around 35–40 minutes or until a toothpick inserted in the center comes out clean. Keep an eye on the cake while baking to avoid overbrowning.
