Chocolate Coffee Cake

This chocolate coffee cake impresses with its simplicity and honest flavor. The soaking process—allowing flour and liquid to sit together for up to a day—creates an exceptionally moist crumb that regular cakes can't achieve. It's not overly sweet, making it perfect for pairing with morning coffee. The flavor profile combines cocoa powder with warm spices like cinnamon and nutmeg, while whole wheat flour adds nutrition and authenticity. Topped with nuts for texture, it delivers genuine homemade taste without unnecessary complexity.

Ingredients

  • 3 cups whole wheat flour
  • 2 cups whey or kefir
  • 1 1/2 cups artificial sweetener sucanat or regular sugar
  • 1 cup butter or coconut oil
  • 1/4 cup cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1 dash salt
  • 1 dash clove
  • 1 cup nuts optional

Method

  1. Begin by combining 3 cups whole wheat flour with 2 cups whey or kefir in a large bowl. Stir these together until well incorporated, then cover the bowl and let the mixture soak for 12 to 24 hours at room temperature. This soaking period is vital to the cake's development, as it allows the flour to fully hydrate and creates the ideal texture for the finished product.
  2. After the soaking period is complete, add the remaining ingredients to the bowl: 1 1/2 cups artificial sweetener, 1 cup butter or coconut oil, 1/4 cup cocoa powder, 1 1/2 teaspoons baking soda, 1 tablespoon cinnamon, 1/2 teaspoon nutmeg, 1 teaspoon baking powder, a dash of salt, and a dash of clove. Mix all ingredients thoroughly until you have a uniform batter with no dry flour visible.
  3. Pour the batter into a greased 9x13 inch pan. If desired, top the cake with 1 cup of chopped nuts, pressing them gently into the batter. Bake at 350 degrees for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. Allow the cake to cool in the pan for several minutes before serving.
