Ingredients

  • cups 150g all-purpose flour
  • tsps baking powder
  • ½ tsp salt
  • ½ tsp pumpkin pie spice
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ cup 55g salted butter, softened
  • ¼ cup 55g sugar
  • 1 extra-large egg
  • 1 tbsp golden syrup or light corn syrup
  • 4 tbsps milk
  • About ⅔ cup 55g sliced almonds

Method

  1. Preheat your oven to 375°F (190°C). Line a baking tray with parchment paper.
  2. In a large bowl, sift together the flour, baking powder, salt, pumpkin pie spice, cinnamon, and ginger. Stir well to combine the spices evenly.
  3. Add the softened butter and sugar to the dry ingredients. Rub the butter into the flour with your fingertips until the mixture looks like fine crumbs.
  4. Beat the egg with the milk and golden syrup. Pour this wet mixture into the bowl and mix everything with a spoon or your hands until you get a soft dough.
  5. Turn the dough onto a floured surface and knead it gently just until smooth—don’t overwork it.
  6. Divide the dough into 8-10 equal pieces. Shape each piece into a round bun and place them on the prepared baking tray.
  7. Press a generous handful of sliced almonds onto the top of each bun, gently pressing so they stick.
  8. Bake for 15-18 minutes, or until the buns are golden brown and cooked through.
  9. Remove from the oven and let the buns cool slightly on a wire rack before serving.
