  • 1 tsp baking soda
  • 3 tbsps 30g sugar
  • 2 tbsps 30g salted butter
  • About ⅔ cup 150ml milk

  1. Start by mixing the flour, baking soda, cream of tartar, and sugar in a large bowl. Stir them together well so everything is evenly spread out.
  2. Cut the butter into small cubes and rub it into the flour mixture using your fingertips. Keep doing this until the mixture looks like fine crumbs, kind of like sand.
  3. Slowly pour in the milk while stirring with a knife or spoon. Keep mixing until the dough starts to come together and looks soft but not sticky. If it feels too wet, sprinkle in a little more flour.
  4. Turn the dough out onto a floured surface and gently knead it a couple of times to bring it fully together. Don’t overwork it; just enough to make a smooth dough.
  5. Roll the dough into a circle about 1 inch (2.5 cm) thick. Use a round cutter or a glass to cut out scones. Place the scones on a plate dusted with flour.
  6. Heat a non-stick frying pan or griddle on medium heat. Carefully place the scones in the pan, making sure they don’t touch each other.
  7. Cook the scones for about 6-8 minutes on one side until they puff up and turn golden brown. Then flip them and cook the other side for another 6-8 minutes. You want both sides golden and cooked through.
  8. Remove the scones and let them cool slightly before serving. They taste wonderful with butter, jam, or cream!
