Ingredients

  • 3⅔ cups 450g all-purpose flour, plus extra for dusting
  • teaspoons baking powder
  • 2 teaspoons salt
  • ½ cup 115g salted butter, softened
  • 2 extra-large eggs
  • ¾ cup + 2 tablespoons 115g pitted black olives, roughly chopped
  • cups 225g plus ¼ cup (30g) grated Gruyère
  • A splash of milk

Method

  1. Alright, let’s get started! First things first, preheat your oven to 200°C (that’s 400°F for you folks across the pond). While that warms up, grab a baking dish and give it a quick grease or line it with parchment paper—makes cleaning up so much easier!
  2. Now, in a big mixing bowl, toss in your flour, baking powder, and salt. Give it a good stir—just enough to get everything cozy together. Next, grab that buttery goodness—cut your softened butter into small chunks. Use your fingers to rub the butter into the flour mixture. It’ll start looking crumbly, like little golden breadcrumbs—that’s exactly what we want.
  3. Time to bring in the stars: the Gruyère and those lovely black olives. Add most of the cheese and olives into the mix and stir them in so every bite gets a bit of that savory magic.
  4. In a separate bowl, beat your eggs lightly. Pour the eggs into your dry ingredients, then splash in some milk. Give everything a gentle stir. You’re aiming for a sticky dough here, so if it feels dry, add a little more milk—just a tablespoon at a time.
  5. Sprinkle some flour on your countertop and turn out your dough. Don’t be shy—press or pat it down into a rectangle about an inch to an inch and a half thick. Now, carefully place it into your prepared baking dish.
  6. For the grand finale, sprinkle the remaining Gruyère on top—this gives us that glorious golden crust.
  7. Pop it into your preheated oven and bake for about 25 to 30 minutes. You’ll know it’s done when the top is beautifully golden and a skewer poked in comes out clean.
  8. Once it’s out of the oven, give it a few minutes to cool. Then slice it up into squares, serve warm, and enjoy that cheesy, olive-filled goodness with every bite. Trust me—you’re gonna love it!
