Ingredients
  

  • 1 lb 500g baby spinach leaves (all stems removed)
  • 3 large slices of thick-cut white bread crusts removed
  • ¼ cup sunflower oil
  • 1 garlic clove crushed
  • 12 slices thick-cut bacon chopped
  • 4 –5 tbsp vinaigrette or blue cheese dressing
  • Salt and black pepper to taste

Method
 

  1. Start by preparing your salad base and croutons. Tear 1 lb (500g) of baby spinach leaves into large pieces and place them in a salad bowl, making sure all stems have been removed.
  2. For the croutons, cut 3 large slices of thick-cut white bread (with crusts removed) into small cubes. Heat ¼ cup sunflower oil in a frying pan over medium heat, add 1 crushed garlic clove, and cook for 1 minute until fragrant.
  3. Add the bread cubes to the pan and cook, stirring frequently, for 1–2 minutes until they turn golden and crisp. Transfer the croutons to paper towels to drain and cool.
  4. While the croutons drain, return the same frying pan to the heat and add 12 slices of chopped thick-cut bacon.
  5. Fry for approximately 5 minutes, stirring occasionally, until the bacon is crisp and rendered. Remove the bacon with a slotted spoon and drain it on fresh paper towels. Sprinkle the cooked bacon over the spinach in your salad bowl.
  6. Complete the salad by dressing and tossing all components together. Spoon 4–5 tbsp of vinaigrette or blue cheese dressing over the salad, then season with salt and black pepper to taste. Gently toss all ingredients to distribute the dressing evenly.
  7. Finally, scatter the cooled croutons over the top of the salad and serve immediately while the croutons remain crisp and the salad is at its ideal temperature and texture.
