Ingredients

  • 1 cup 115g Parmesan, grated
  • ½ cup 115g salted butter, cubed
  • 1 cup 125g all-purpose flour
  • ½ cup 55g sun-dried tomatoes, chopped
  • 2 tbsp chopped fresh rosemary plus extra for rolling

Method

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Prepare the dough. In a large mixing bowl, combine the flour and Parmesan. Add the butter and mix until it forms a crumbly texture.
  3. Add flavor. Stir in the chopped sun-dried tomatoes and rosemary, then mix everything together until a dough forms.
  4. Roll the dough. Turn the dough onto a lightly floured surface and roll it out to about 1/8 inch thick.
  5. Cut and roll. Cut the dough into desired shapes. Roll the edges of the crackers in chopped rosemary for added flavor.
  6. Bake. Place the crackers on the baking sheet and bake for 12-15 minutes or until golden brown.
  7. Cool and serve. Let the crackers cool before serving. Enjoy!
